We use modern steel and equipment to ensure your knife outperforms the others. All of our fillet knives are made using American manufactured steel. Only steels that hold an edge, remain tough when cutting through fish bones, and fight corrosion will be used on our fillet knives. We use ultra-premium CPM s90v for our stainless and Damasteel for our Damascus fillet knives. We use digital kilns for our heat treat. All fillet knives have been tempered in liquid nitrogen for added edge retention and stain-fighting abilities.
